Automatic optical sorter on destemmed grapes, followed by pre-fermentation cold soak maceration for 4 days. Fermentations, by separate varieties, in stainless steel tanks with controlled temperature between 24 and 26ºC. All winemaking processes are carried out by gravity, in order to better preserve grape quality.
